I finally tried a bunch of other people’s from online recipes, settling on this one. Even screwed up versions of this particular method are edible. This recipe also works without letting it rise, You can go from start to finish in less than half an hour. And even finish most of the cleanup while its cooking.First move a rack to the lowest level in the oven, and turn the oven on bake to 550-600. If your oven goes higher you may be able to cook it in under five minutes. Depending how long your oven takes to heat up you may want to wait a while before starting the actual work.Put 2/3 cup water in a measuring cup, and either microwave it or boil it then let it sit. If its too hot to stick your finger in , it’s too hot to use. You can add 1 tsp sugar or honey or anything full of sugar – even if the water is too hot. Once it’s not to hot, put 1-2 tsp yeast in it.Let that sit and in a large bowl mix 2/3cup WW flour with 2/3cup white flour , 1/8 – 1/2tsp of salt. Mix it around well. Then add 1-3tsp olive oil , mix that in a bit, not much.Slowly pour the water into the bowl of flour, never the other way around. Mix it together with a spoon/fork until its mostly together. You may need to add a tbsp or two of water, use your own judgement based on how dry the dough feels. Then use your hands and knead it very hard for 3-5 minutes.Let it sit covered while you do other stuff like prepare the toppings. If it’s cold it may need to sit longer. Ten minutes is usually long enough. If it doesn’t rise something is wrong, either the water wasn’t warm or the yeast is dead. You can still cook it but it will be very hard thin crust and you may want to lower the temperature, cooking it a bit longer. It is possible to skip the rising step and just roll it right away. – but you won’t know if its failed to rise.Roll it out, use your hands if you are skilled enough. Put corn meal on the pizza stone/pan. Then top it, put whatever you want on it. I usually (bottom up) put spices, ,sauce, vegetables, meat, cheese. Avoid thinly cut stuff – because the temperature is so hot they will burn really fast. For some reason onions are frequently the first to burn, I usually cut them at least 5mm thick. If you have smaller things like very small button mushrooms, you don’t even need to cut them.Put it in the bottom rack and do not open the oven til it’s done! Unless you have a stone or pizza oven. There is a happy place in between dough not done and oops those vegetables were too thin. It’s ready once something is burning too bad or 15 minutes have passed. In my oven set at 550-575 it takes 12-14 minutes.Let it sit on a cooling rack for around five minutes then eat it.The biggest difference
